The 6 things that should always be in your kitchen

Here's a moment I think everyone has had.
It's evening. You're tired. You open the fridge, stand there for a while, and conclude there's nothing to eat. Then you open it again four minutes later, as if something might have changed. Then you order something, or you have toast.
And the strange part is that the fridge usually isn't empty. There's food in there. Condiments, half an onion, some cheese, whatever's left of the weekend. What's missing isn't food exactly. It's a combination that adds up to a meal.
That gap, between having ingredients and having dinner, is where most people's good intentions quietly die. Not on Sunday when they're planning. On Wednesday at half six, in front of an open fridge.
So today isn't a shopping list of superfoods. It's the six things I think are worth always having in the house, chosen specifically because any two or three of them combine into something decent in about ten minutes. Keep these stocked and the fridge stops being a problem to solve.

1. Eggs
The most useful food in any kitchen, and it isn't close.
Eggs are a complete protein, they cook in four minutes, they need no planning and no skill, and they work at every meal of the day. Scrambled for breakfast, boiled onto a salad at lunch, fried on top of leftover rice or vegetables for dinner. A fried egg turns almost any half-meal into a proper one.
They also keep for weeks, which means the emergency dinner is always available. If you buy nothing else on this list, buy these.
2. Greek yogurt or cottage cheese
Whichever you prefer, but have one of them.
This is your no-cook protein, and it's the reason breakfast can take ninety seconds. Greek yogurt is strained, so it carries roughly double the protein of regular yogurt for the same price bracket. Cottage cheese does a similar job and disappears completely when blended, which is useful if the texture puts you off.
Buy the plain version rather than the flavoured tubs, which frequently carry as much sugar as a dessert. And consider the full-fat one. It's more satisfying, and the fat is part of why it fills you up.
Beyond breakfast, it's a sauce base, a dip, a topping for dal or soup, and dessert with fruit and a bit of honey.
3. Tinned fish
Sardines, mackerel, tuna, salmon. Whichever you'll actually eat.
This is the cupboard item that removes every excuse. It lasts years, it costs very little, it needs no cooking, and it turns pasta, toast, rice or a bag of salad into an actual meal in three minutes. It's also the cheapest source of omega-3 fats you'll find anywhere, which are among the better-studied things you can put in your body.
If tinned fish feels like a stretch, start with it mashed onto toast with lemon and olive oil. That's a normal lunch across most of the Mediterranean and it's genuinely delicious.
4. Beans and lentils
Tinned for speed, dried if you're organised. Both are fine.
These bring protein and a serious amount of fibre in the same package, which is an unusually good combination for keeping you full. They're also the cheapest thing on this list by a distance, and one of the most flexible. Chickpeas into a salad, black beans into eggs, red lentils into a soup that takes twenty minutes and needs no soaking.
A tin of beans is the difference between a side dish and a dinner, on almost any night.
5. Frozen vegetables
Spinach, peas, mixed vegetables, broccoli, whatever your household eats.
I'd argue these are more useful than fresh, and here's why. Fresh vegetables come with a deadline. You buy them on Saturday with good intentions and throw half of them out on Thursday, and after that happens a few times you stop buying them. Frozen ones wait patiently for months.
They're frozen shortly after picking, so nutritionally they hold up perfectly well against fresh that's spent a week in transit. And practically, frozen spinach disappears into eggs, pasta sauce, soup and dal without anyone at the table noticing.
This is the item that quietly ensures there are vegetables in your dinner on the nights you weren't planning to have any.
6. Extra virgin olive oil
The backbone of the whole kitchen.
Everything above tastes better with it, and it's the fat sitting at the centre of the most studied way of eating on the planet. Buy extra virgin, because the refining process strips out most of what you're paying for.
Use it generously rather than measuring it out nervously. A drizzle over the beans, over the yogurt, over the eggs, over the frozen vegetables once they're cooked, is often the entire difference between food you tolerate and food you look forward to.
And the three that cost almost nothing
Not part of the six, but they're what make the six taste like something.
Garlic and onions. These are why vegetables are worth eating. Plain steamed vegetables are miserable. Vegetables softened in olive oil with garlic and onion are a different food entirely.
Lemons. Acid wakes up anything that tastes flat. Squeeze it over the fish, the beans, the greens.
Chilli flakes and a decent salt. Two seconds of effort, enormous difference.
If you're ever eating something healthy and finding it dull, it's almost always because one of these three is missing rather than because the food itself is boring.
So here's your week
Do an audit. Right now, or tonight when you're home.
Go through those six and see which ones you're missing. For most people it's two or three, usually the tinned fish and the frozen vegetables. Buy those on your next shop and nothing else new.
That's the entire assignment. Not a meal plan. Just making sure that on the next bad evening, the ingredients for a decent dinner are already in the house.
The part the list doesn't solve
Having the right six things in your kitchen removes one obstacle. It doesn't remove the other one, which is standing in front of them at 6:30pm with no idea what to actually make. Plenty of people have eggs, beans, frozen spinach and olive oil in the house and still order takeaway, because ingredients aren't dinner until someone decides what they're becoming.
